EAT Easy & Cheap 3: Peanut Butter Cups (no oven dessert!!)

Hi Friends! I came across this recipe on Pintrest and knew I had to try it. I love peanut butter and easy desserts so I’m excited to share this with you! It’s super easy and they turned out really delicious even though I went a little off the recipe on accident. Let’s get into it!

What you will need-

1 cup peanut butter

1/2 cup chocolate chips

1/4 cup coconut milk

1/4 cup melted coconut oil

2 tbsp honey

double boiler 

silicone spatula 

muffin tins, preferably rubber- any size 

Step 1-

You want to start by heating the peanut butter for 45 seconds, then add the melted coconut oil and melted honey. I used the same cup to melt the oil then the honey.

Mix these, then spoon into tins. Put them into the freezer for at least 15 minutes. I recommend using rubber cupcake molds lined with cupcake paper, which i didn’t have. If you don’t have the paper, make sure your tin is well greased. Rubber tins make it easy to pop them out in the end.

While the pb is in the freezer, this is a great time to melt the chocolate!

I don’t have a double boiler so I just put one heat proof container into a shallow pot of boiling water.

Melt the chocolate and coconut milk and mix constantly. It melts and heats pretty quickly. When it’s mixed, take it off heat and let it cool until room temperature, if it’s too hot it will melt through the pb.

Take the now solid pb from the freezer and start scooping chocolate on top. I realized at this point that the recipe I was following was “inside out” pb cups so I was supposed to leave half of the pb to pour on top and only put a little dollop of chocolate. So basically, I didn’t have enough chocolate and I should’ve left half the pb to top the candy, but they still turned out good.

After adding the chocolate, put back in the freezer.

I definitely should have used muffin wrappers to make these easier to eat, but they turned out so yummy! I used a fork to help get theses out. You can’t keep these out of the fridge too long, but they are a great homemade gift or party snack or something you can make for yourself!
