Hi guys! I wanted to share this delicious and virtually calorie-less meal! That’s right, you can eat as much as you want and be completely guilt free about it! Here’s what you’ll need to get started!
Ingredients
Spaghetti Squash- put in microwave for about 6 minutes. Cut in half, deseed, pour olive oil and salt on both halves. Cook @ 400 Fahrenheit (205 Celsius) for 40-45 minutes.
Chicken (or tofu if vegan/vegetarian)
Broccoli
Green Beans
Water Chestnuts- one can
Garlic
Ginger
Cilantro, Snap Peas optional but I don’t have.
Stir Fry Sauce, Soy Sauce
Step 1
While squash is cooking, prepare the other parts. Cook chicken with salt, garlic powder, and seasonings of your choice.
Once chicken is completely cooked or almost completely cooked, add cut up veggies and water chestnuts. Make sure to cook them UNcovered, you don’t want the veggies to get mushy at all. Cook for 15-20 minutes on medium heat or until the veggies are cooked and crunchy. Add ginger and garlic for a couple minutes when everything is done. This assures that the flavor is strong.
Step 2
Once the squash is out of the oven, let it cool for at least 15 minutes before handling it. Once cool, use a fork to shred out the squash into a pot. The squash comes out easily so make sure you get every bit off the skin.
Step 3
We’re almost done! Now we need to mix everything and the sauce!
Mix all the ingredients and add the sauce a little at a time. You don’t want to over sauce it, so much sure to start with a little and build to your liking.
Step 4 EATTT
And that’s it! I paired my meal with some roasted potatoes. This is so delicious, healthy, and easy to make! I hope you guys try out this recipe!
